July is National Ice Cream Month. But today, we’re going to talk about how this summer treat is more than just dessert—it’s a metaphor for living well.”

1. Ice Cream Cookie Sandwiches

Ingredients:

Your favorite ice cream (vanilla, chocolate, mint, etc.)

Large soft cookies (chocolate chip, oatmeal, sugar)

Instructions:

Let the ice cream soften slightly for 5–7 minutes.

Scoop about ¼ cup of ice cream onto the flat side of one cookie.

Gently press another cookie on top to create a sandwich.

Freeze for 1 hour before serving.
